Espadon Restaurant, nestled within the luxurious Ritz Paris, has swiftly climbed the culinary ladder, earning its first MICHELIN Star just months after opening. This prestigious honor celebrates the exceptional dining experience crafted by Espadon, highlighting the exquisite cuisine and the remarkable talent of its team.

It’s a jubilant moment for the Ritz Paris and the mastermind behind the magic, Chef Eugénie Béziat, supported by her dynamic team who share her bold vision, passion, and relentless pursuit of culinary excellence.

Eugénie Béziat isn’t your typical chef. She’s a culinary artist who lets her instincts guide her creations, drawing inspiration from far-flung flavors and memories. Her French gastronomic dishes are known for their unexpected and delicate combinations, bringing a burst of color, aroma, and taste to every plate. Béziat’s unique style balances sweet and sour, bitter and spicy, resulting in a symphony of flavors that dance on the palate.

Reflecting on the MICHELIN Star, Béziat shares, “This is a great honor for us all. I’m incredibly proud of the team who work alongside me every day, and I dedicate this Star to them.”

While Chef Béziat is the face of Espadon’s culinary success, the accolade is a testament to the entire team’s dedication and talent. The kitchen and dining room teams work tirelessly to reinvent the art of gastronomy daily.

Special kudos to Camille Bouabdallah, the restaurant manager, who orchestrates the dining experience with finesse; François Perret, the Pastry Chef behind the delicate desserts; and Florian Guilloteau, the Head Sommelier who masterfully pairs food and wine.

Espadon’s dining room offers an intimate yet vibrant atmosphere. Large bay windows reveal the open kitchen where a brigade of ten cooks performs a silent ballet, turning the preparation of each dish into a captivating show. The decor, inspired by Chef Béziat’s passion for plants, includes a crystal ceiling lamp that resembles the pages of a culinary herbarium, echoing her aromatic cuisine.

The MICHELIN Star is the latest in a string of accolades, including the “New Arrival of the Year” award from LA LISTE and three Ecotable ‘macaroons’ for its eco-responsible practices. Espadon’s commitment to sustainability is evident in its initiatives, like creating a vegetable garden with local produce, a seasonal menu, and sustainable waste management practices.
