The Story Behind the Spring Cocktail

At Peter: The Bar, each cocktail is an invitation to travel across Japan through flavor and aroma. Inspired by mountains, fields, and forests, ingredients are thoughtfully sourced—from twigs and fruits to botanicals and medicinal herbs—each carrying a quiet story of the land from which it comes.

Guided by Head Mixologist Mari Kamata and her team, these elements are explored through all five senses before being transformed into cocktails that range from bold to delicate, and at times, intriguingly complex. Presented alongside the drinks, a curated collection of test tubes offers a tactile glimpse into this journey—dried blossoms, bark, or herbs—encouraging guests to touch, smell, and connect with the origins of their cocktail as its story gradually unfolds in the glass.
